Faire r\u00f4tir \u00e0 d\u00e9couvert dans un four pr\u00e9chauff\u00e9 \u00e0 450 \u00b0F (230 \u00b0C) pendant 10 minutes. Baisser la chaleur du four \u00e0 275 \u00b0F (140 \u00b0C); faire cuire pendant environ 4 heures 30 minutes ou jusqu&#8217;\u00e0 ce que le thermom\u00e8tre indique 145 \u00b0F (63 \u00b0C) pour une cuisson mi-saignante.<br \/>\nRetirer le rosbif du four, le couvrir sans serrer de papier d\u2019aluminium et le laisser reposer pendant 15 minutes avant de le trancher contre le grain. \u00c9cumer le gras accumul\u00e9 \u00e0 la surface du jus de cuisson, puis pr\u00e9parer la Sauce au vin et aux canneberges directement dans le plat du gril-l\u00e8chefrite.<br \/>\nSauce au vin et aux canneberges<br \/>\nPlacer le plat sur la cuisini\u00e8re et faire chauffer le jus \u00e0 feu moyen-vif. Ajouter \u00bc de tasse (50 ml) d\u2019\u00e9chalote fran\u00e7aise ou d\u2019oignon hach\u00e9, et 1 gousse d\u2019ail \u00e9minc\u00e9e; faire ramollir en remuant. Incorporer graduellement 1 tasse (250 ml) de bouillon de b\u0153uf \u00e0 teneur r\u00e9duite en sodium et 1 tasse (250 ml) de vin rouge. Cuire en raclant le fond du plat pour en d\u00e9tacher les particules cuites, jusqu\u2019\u00e0 ce que la sauce soit r\u00e9duite \u00e0 environ 1 tasse (250 ml). Incorporer graduellement un m\u00e9lange de 1 c. \u00e0 soupe (15 ml) de f\u00e9cule de ma\u00efs et de 1 c. \u00e0 soupe (15 ml) d\u2019eau froide; porter \u00e0 \u00e9bullition et remuer la sauce jusqu\u2019\u00e0 ce qu\u2019elle \u00e9paississe. Incorporer \u00bd tasse (125 ml) de sauce aux canneberges et chauffer le tout. Ajouter une rasade de cr\u00e8me \u00e0 fouetter, si d\u00e9sir\u00e9.
