Ins\u00e9rer un thermom\u00e8tre r\u00e9sistant \u00e0 la chaleur au centre du rosbif. Faire cuire \u00e0 d\u00e9couvert \u00e0 450 \u00b0F (230 \u00b0C) pendant 10 minutes; baisser la temp\u00e9rature du four \u00e0 275 \u00b0F (140 \u00b0C); laisser cuire jusqu\u2019\u00e0 ce que le thermom\u00e8tre \u00e0 viande indique 135 \u00b0F (57 \u00b0C) pour un rosbif mi-saignant, de 1 \u00be heure \u00e0 2 heures ou 150 \u00b0F (66 \u00b0C) pour un rosbif bien cuit. Sortir le rosbif du four, le couvrir d\u2019un papier d\u2019aluminium et le laisser reposer de 15 \u00e0 30 minutes avant de le trancher.<\/p>\n<p id=\"instruction-step-3\"><strong>Pendant ce temps, <\/strong>\u00a0pr\u00e9parer la sauce au porto; conserver 2 c. \u00e0 soupe (30 ml) du gras de la r\u00f4tissoire, jeter le reste. Placer la r\u00f4tissoire sur un feu moyen, ajouter les \u00e9chalotes et laisser cuire jusqu\u2019\u00e0 ce qu\u2019elles soient ramollies. Incorporer le vin et le porto, gratter le fond de la r\u00f4tissoire pour d\u00e9coller les sucs de la viande. Porter \u00e0 \u00e9bullition, baisser le feu et laisser mijoter jusqu\u2019\u00e0 ce que la sauce diminue de moiti\u00e9, environ 7 minutes. Incorporer le bouillon.
