Ins\u00e9rer un thermom\u00e8tre convenant au four au centre du rosbif, en \u00e9vitant le gras et les os. Saisir dans un four pr\u00e9chauff\u00e9 \u00e0 450 \u00b0F (230 \u00b0C) pendant 10 minutes.<\/p>\n<p id=\"instruction-step-2\">R\u00e9duire la temp\u00e9rature du four \u00e0 275 \u00b0F (140 \u00b0C). Cuire le rosbif jusqu&#8217;\u00e0 ce que le thermom\u00e8tre indique 140 \u00b0F (60 \u00b0C) pour une cuisson au moins mi-saignante, soit pendant environ 2 heures.<\/p>\n<p id=\"instruction-step-3\">Placer le rosbif sur une planche \u00e0 d\u00e9couper. Couvrir d&#8217;une feuille d&#8217;aluminium et laisser reposer pendant au moins 15 minutes. Pendant ce temps, pr\u00e9parer la sauce au vin. Placer le plat sur la cuisini\u00e8re et chauffer \u00e0 feu moyen-vif. Incorporer en fouettant 2 c. \u00e0 soupe (30 ml) de farine tout usage.Cuire pendant 1 minute, en remuant continuellement. Incorporer graduellement, tout en fouettant, 1 tasse (250 ml) de bouillon de b\u0153uf \u00e0 teneur r\u00e9duite en sodium, 1 tasse (250 ml) de vin rouge et 2 c. \u00e0 th\u00e9 (10 ml) d&#8217;un m\u00e9lange de grains de poivre grossi\u00e8rement moulus. Cuire, en remuant et en raclant le fond du plat pour en d\u00e9loger les sucs, pendant environ 4 minutes ou jusqu&#8217;\u00e0 ce que la sauce ait \u00e9paissi.
