Retirer les poires, les couvrir et les r\u00e9server. Continuer la cuisson de la sauce sans  couvrir, pendant 3 \u00e0 4 minutes pour la r\u00e9duire \u00e0 1\/3 tasse (75 ml). <\/p>\n<p id=\"instruction-step-2\"><strong>Assaisonner <\/strong>\u00a0les biftecks de sel et de poivre. Faire chauffer un po\u00ealon antiadh\u00e9sif  \u00e0 feu moyen fort, faire cuire les biftecks de 5 \u00e0 7 minutes pour le degr\u00e9 mi-saignant. R\u00e9server au chaud et couvrir.<\/p>\n<p id=\"instruction-step-3\"><strong>Ajouter<\/strong>\u00a0la sauce r\u00e9serv\u00e9e au po\u00ealon pour d\u00e9glacer; laisser cuire \u00e0 feu moyen fort pendant 5 minutes, jusqu\u2019\u00e0 ce que la sauce soit r\u00e9duite \u00e0 1\/3 tasse (75  ml) et qu\u2019elle soit sirupeuse. D\u00e9poser un peu de sauce au fond des assiettes, recouvrir avec le bifteck et les demies poires. Arroser du reste de la sauce.
