Ins\u00e9rer un thermom\u00e8tre \u00e0 viande au centre du rosbif en \u00e9vitant de toucher le tournebroche.<\/p>\n<p id=\"instruction-step-2\"><strong>Placer <\/strong>\u00a0une l\u00e8chefrite contenant \u00bd po (1 cm). d\u2019eau sous la grille. Pr\u00e9chauffer le barbecue \u00e0 puissance moyenne \u00e0 \u00e9lev\u00e9e 400 \u00baF (200 \u00baC).<\/p>\n<p id=\"instruction-step-3\"><strong>Faire  <\/strong>\u00a0cuire le rosbif au barbecue sur la grille au-dessus du plat d\u2019eau, couvercle referm\u00e9 et \u00e0 chaleur constante, jusqu&#8217;\u00e0 ce que le thermom\u00e8tre indique 140 \u00baF (60 \u00baC) pour une cuisson \u00e0 point (environ 20 min par lb ou 45 min par kg).<\/p>\n<p id=\"instruction-step-4\"><strong>Transf\u00e9rer<\/strong>\u00a0le rosbif sur une planche \u00e0 d\u00e9couper, le couvrir de papier d&#8217;aluminium et le laisser reposer de 10 \u00e0 15 minutes. Le tailler en tranches fines et le servir avec la salsa aux pommes et \u00e0 l&#8217;oignon.<\/p>\n<h4>Salsa aux pommes et aux oignons verts <\/h4>\n<p id=\"instruction-step-5\">Dans un bol moyen, m\u00e9langer 1 grosse pomme McIntosh, \u00e9vid\u00e9e et hach\u00e9e finement, 1 tomate italienne, \u00e9p\u00e9pin\u00e9e et hach\u00e9e, 1\/3 de tasse (75 ml) d\u2019oignon vert hach\u00e9, 2 c. \u00e0 table (30 ml) de vinaigre de cidre, 2 c. \u00e0 table (30 ml) de coriandre ou de persil hach\u00e9, 1 c. \u00e0 table (15 ml) de raifort pr\u00e9par\u00e9, 3 \u00e0 4 c. \u00e0 th\u00e9 (15 \u00e0 20 ml) de piment jalape\u00f1o frais ou marin\u00e9 hach\u00e9 finement, 1 gousse d\u2019ail, hach\u00e9e finement, sel et poivre au go\u00fbt. Bien m\u00e9langer le tout et laisser reposer pendant 30 minutes. V\u00e9rifier et rectifier l\u2019assaisonnement au besoin avant de servir.
