Le temps de cuisson est estim\u00e9 &#8211; le contre-filet cuit g\u00e9n\u00e9ralement plus vite que les autres rosbifs \u00e0 cause de sa forme. c. \u00e0 th\u00e9 (1 ml) CHACUN de sel et de poivre; badigeonner le rosbif de ce m\u00e9lange. D\u00e9poser le rosbif gras dessus, sur une grille plac\u00e9e dans un po\u00ealon peu profond. Ins\u00e9rer un thermom\u00e8tre r\u00e9sistant \u00e0 la chaleur au centre du rosbif en \u00e9vitant le gras.<\/p>\n<p id=\"instruction-step-2\"><strong>Faire saisir <\/strong>\u00a0\u00e0 d\u00e9couvert dans le four pr\u00e9chauff\u00e9 \u00e0 450 \u00b0F (230 \u00b0C) pendant 10 minutes.<\/p>\n<p id=\"instruction-step-3\"><strong>R\u00e9duire <\/strong>\u00a0la temp\u00e9rature du four \u00e0 275 \u00b0F (140 \u00b0C). Laisser cuire jusqu\u2019\u00e0 ce que le thermom\u00e8tre indique 140 \u00b0F (60 \u00b0C) pour une cuisson mi-saignante (de 1 1\/2 \u00e0 2 heures) ou 155 \u00b0F (68 \u00b0C) pour une cuisson \u00e0 point (de 1 3\/4 \u00e0 2 1\/4 heures).<\/p>\n<p id=\"instruction-step-4\"><strong>Pendant ce temps,  <\/strong>\u00a0faire tremper les champignons d\u00e9shydrat\u00e9s dans 1 tasse (250 ml) d\u2019eau bouillante jusqu\u2019\u00e0 ce qu\u2019ils soient ramollis, environ 10 minutes. \u00c9goutter les champignons et conserver le liquide de trempage. Hacher les champignons et r\u00e9server. Faire chauffer l\u2019huile dans un grand po\u00ealon \u00e0 feu moyen vif; cuire l\u2019oignon pendant 3 minutes ou jusqu\u2019\u00e0 ce qu\u2019il soit ramolli. Ajouter les champignons frais et le reste du sel et du poivre; laisser cuire 5 minutes ou jusqu\u2019\u00e0 ce que le m\u00e9lange soit dor\u00e9 et que le liquide soit \u00e9vapor\u00e9.
