R\u00e9server.<\/p>\n<p id=\"instruction-step-3\">Remettre le po\u00ealon huil\u00e9 sur un feu moyen-\u00e9lev\u00e9 ; faire sauter les champignons, 1\/4 de c. \u00e0 th\u00e9 de sel et la m\u00eame quantit\u00e9 de poivre pendant environ 5 minutes ou jusqu&#8217;\u00e0 ce qu&#8217;ils soient dor\u00e9s ; r\u00e9server.<\/p>\n<p id=\"instruction-step-4\">Faire chauffer un po\u00ealon de fonte sur feu \u00e9lev\u00e9 ; ajouter 1 c. \u00e0 table d&#8217;huile. Assaisonner les biftecks du reste de sel et de poivre. Bien saisir des deux c\u00f4t\u00e9s. R\u00e9duire le feu et faire cuire jusqu&#8217;\u00e0 ce qu&#8217;un thermom\u00e8tre num\u00e9rique \u00e0 lecture rapide indique une temp\u00e9rature interne de 140\u00a0\u00b0F (60\u00a0\u00b0C).<\/p>\n<p id=\"instruction-step-5\">Retirer les biftecks du feu et laisser reposer pendant 10 minutes.<\/p>\n<p id=\"instruction-step-6\">Verser le jus de cuisson des biftecks et le bouillon de b\u0153uf dans un petit chaudron. Faire bouillir jusqu&#8217;\u00e0 ce que le tout soit r\u00e9duit \u00e0 1\/2 tasse. Incorporer le beurre en fouettant afin d&#8217;\u00e9paissir la sauce.<\/p>\n<p id=\"instruction-step-7\">Gremolata : M\u00e9langer le persil, le zeste et le jus de citron, l&#8217;ail, les anchois et l&#8217;huile dans un bol ; r\u00e9server. <\/p>\n<p id=\"instruction-step-8\">Sur chaque assiette, \u00e9taler le quart de la gremolata et d\u00e9poser le bifteck dessus. Disposer les champignons et les pommes de terre autour du bifteck.
