Cuire les poivrons, l\u2019ail et les herbes de Provence ou le thym (facultatifs) de 5 \u00e0 8 minutes ou jusqu\u2019\u00e0 ce que les poivrons soient tendres et l\u00e9g\u00e8rement dor\u00e9s. Retirer le po\u00ealon du feu, incorporer le persil et r\u00e9server.<\/p>\n<p id=\"instruction-step-2\">Au moyen d\u2019un long couteau du chef ou d\u2019un couteau \u00e0 d\u00e9pecer, entailler le rosbif dans la longueur jusqu\u2019\u00e0 \u00bd pouce du bas. Ouvrir le rosbif comme un livre et entailler un des c\u00f4t\u00e9s de mani\u00e8re \u00e0 pouvoir le d\u00e9rouler en une tranche d\u2019environ \u00be de pouce. Faire la m\u00eame chose de l\u2019autre c\u00f4t\u00e9, de mani\u00e8re \u00e0 obtenir un rectangle d\u2019environ \u00be de pouce d\u2019\u00e9paisseur. Au moyen d\u2019un maillet (attendrisseur), aplatir la viande jusqu\u2019\u00e0 \u00bd pouce d\u2019\u00e9paisseur. Saler et poivrer toute la surface, puis badigeonner de moutarde. Recouvrir de la garniture de poivrons, puis saupoudrer la chapelure et le fromage (facultatif). Refermer en roulant et ficeler \u00e0 des intervalles de 2 pouces. Saler et poivrer de toutes parts. <\/p>\n<p id=\"instruction-step-3\">Placer le rosbif sur la grille d\u2019un plat \u00e0 r\u00f4tir peu profond ou sur une plaque \u00e0 rebord tapiss\u00e9e de papier d\u2019aluminium. Saisir dans un four pr\u00e9chauff\u00e9 \u00e0 450 \u00b0F (230 \u00b0C) pendant 10 minutes. R\u00e9duire la temp\u00e9rature du four \u00e0 275 \u00b0F (140 \u00b0C) et cuire pendant environ 1 h 30 min, ou jusqu\u2019\u00e0 ce qu\u2019un thermom\u00e8tre \u00e0 viande indique une temp\u00e9rature interne de 140 \u00b0F (60 \u00b0C) pour une cuisson mi-saignante.
