Couvrir et cuire \u00e0 BASSE temp\u00e9rature de 6 \u00e0 8 heures ou jusqu\u2019\u00e0 ce que la viande se d\u00e9fasse \u00e0 la fourchette.<\/p>\n<p id=\"instruction-step-3\">Transf\u00e9rer la viande sur une planche \u00e0 d\u00e9couper ; couvrir sans serrer d\u2019une feuille de papier d\u2019aluminium pour garder au chaud. Verser la sauce dans une casserole et faire r\u00e9duire de moiti\u00e9 \u00e0 feu \u00e9lev\u00e9, soit pendant environ 10 minutes. Incorporer graduellement le m\u00e9lange de f\u00e9cule de ma\u00efs et d\u2019eau ; porter \u00e0 \u00e9bullition pour faire \u00e9paissir la sauce. Rectifier l\u2019assaisonnement au go\u00fbt.
