Pr\u00e9chauffer le barbecue \u00e0 feu moyen-vif (400 \u02daF). Couper le pain en cubes de \u00bd po (1 cm). \u00c9taler les cubes en couche uniforme dans un grand plat de cuisson en aluminium. Placer le plat d\u2019un c\u00f4t\u00e9 de la grille, puis \u00e9teindre les br\u00fbleurs qui se trouvent directement sous le plat. Fermer le couvercle et faire griller les cro\u00fbtons de 20 \u00e0 25 minutes, en remuant de temps \u00e0 autre, ou jusqu\u2019\u00e0 ce qu\u2019ils soient dor\u00e9s et croustillants de bord en bord. Laisser refroidir. *R\u00e9server 1 tasse (250 ml) de cro\u00fbtons pour cette salade \u00e0 la poire et au bifteck de flanc. (Laisser le reste des cro\u00fbtons refroidir de 2 \u00e0 4 heures, puis les mettre dans un contenant herm\u00e9tique et les conserver jusqu\u2019\u00e0 1 semaine.)<\/p>\n<p id=\"instruction-step-2\">2. \u00c9ponger le bifteck avec des essuie-tout, puis saupoudrer avec \u00bd c. \u00e0 th\u00e9 (2 ml) de sel et tout le poivre. Pr\u00e9chauffer le barbecue \u00e0 feu moyen-vif (400 \u00b0F). Faire griller le bifteck, en le retournant au moins deux fois en cours de cuisson \u00e0 l\u2019aide de pinces, jusqu\u2019au degr\u00e9 de cuisson d\u00e9sir\u00e9. La temp\u00e9rature interne du bifteck doit atteindre 145 \u00b0C (63\u00b0C) pour une viande mi-saignante, 160 \u00b0F (71 \u00b0C) pour une viande \u00e0 point ou 170 \u00b0F\/77 \u00b0C pour une viande bien cuite. Mettre sur un plan de travail et laisser reposer pendant 5 minutes.<\/p>\n<p id=\"instruction-step-3\">3. Entre-temps, m\u00e9langer l\u2019\u00e9chalote, le vinaigre, l\u2019huile et le sel dans un mini-robot culinaire. Hacher les ingr\u00e9dients jusqu\u2019\u00e0 ce que le m\u00e9lange soit presque homog\u00e8ne. R\u00e9server.<\/p>\n<p id=\"instruction-step-4\">4. Dans un grand bol, verser la moiti\u00e9 de la vinaigrette sur le cresson. Bien remuer pour enrober les feuilles. Disposer la salade dans des assiettes de service, puis garnir d\u2019oignons et de tranches de poire. Trancher le bifteck finement contre le grain. Couronner chaque portion de tranches de bifteck, de cro\u00fbtons et de fromage de ch\u00e8vre.
